First of all, who doesn’t like tacos? Second of all…WHO DOESN’T LIKE TACOS? They are so versatile and can be modified to fit anyone’s taste preferences. I like to grill up some meat first (chicken, fish, shrimp or go vegetarian and use mushrooms) and lay it on warm corn tortillas. Next, I layer shredded cabbage, fresh cilantro, chopped red onions, sliced jalapenos (optional), avocado, queso fresco and finish it off with a special salsa. Sometimes I’ll make a mango or pineapple salsa. Sometimes I’m lazy and I’ll just buy pico de gallo. Either way, the salsa has to be fresh and citrus-y. Below is my recipe for my favorite mango salsa.
Mango Mama Maky’s Mango Salsa
- 1 medium mango, peeled and diced
- 1 red pepper, diced
- 1/2 red onion, diced
- 1 jalapeno, deseeded and chopped (optional)
- juice of 1 lime
- salt, pepper (to taste)
- handful of fresh cilantro
Combine everything in a bowl. Eat it all up. I like making this before hand and chilling it in the fridge for at least 30 minutes before serving.
